Healthy & Patriotic Desserts for the 4th of July

The countdown to America’s birthday is on as we get ready to celebrate the 4th of July with family, friends, food, and fun. While much of backyard barbecue planning is centered on the grill and main dishes, no summer party would be complete without tempting desserts to satisfy your sweet tooth.

Here are a few of our favorite 4th of July dessert recipes that are sure to please your guests and get everyone in the patriotic spirit.

Patriotic Berry Parfaits (Healthy & Easy)

Desserts don’t have to be intimidating or time-consuming. In fact, some of the best summer desserts are light, simple, and full of freshness! If you’re short on time, try this fun parfait recipe for your 4th of July party.

Ingredients

  • ¼ cup sugar
  • ¼ cup water
  • 1 cup blueberries
  • 1 tbsp. fresh lemon juice
  • 1 cup heavy cream
  • 10 oz. angel food cake
  • 2 cup strawberries
  • ½ cup shredded coconut
  • 8 canning jars

Directions

  1. In 1-quart saucepan, stir together sugar and water. Heat to boiling on high, stirring occasionally; stir in blueberries and lemon juice. Remove from heat. Let cool completely.
  2. In large bowl, with mixer on medium speed, whip cream until soft peaks form. Gently fold in cooled blueberry mixture.
  3. Place a single layer of angel food cake on bottom of 1 canning jar. Top with 2 tablespoons strawberries, then 2 tablespoons blueberry whipped cream. Repeat layering of cake, strawberries, and whipped cream. Repeat with remaining 7 jars. Serve immediately, or replace screw caps and refrigerate up to 1 day. Before serving, top each parfait with 1 tablespoon coconut.

Triple Berry Layered Cheesecake (Gluten-Free & Vegan)

Hosting a gluten-free backyard barbecue doesn’t have to be a pain, and actually some of the healthiest recipes you can find are gluten-free, raw, and vegan. Here are the steps to make a beautiful gluten-free cheesecake to impress your guests.

Tempeh Cheesecake Crust

  • 8 ounces Medjool dates, pitted
  • 3/4 cup pecans
  • 1/2 cup hazelnuts
  • 1/3 block tempeh (7-ounce package)
  • 1-2 tablespoons water (as needed)

Combine dates, pecans, hazelnuts and tempeh in food processor, blend until crumbly. Add water if needed to add moisture, help form a ball. Press into bottom / sides of 9-inch spring-form pan.

Bottom layer cheesecake

  • 5 cups cashews, soaked several hours / overnight
  • juice of two lemons
  • 1 tablespoon apple cider vinegar
  • 1/2 cup agave
  • 1/2 cup blackberries
  • 1/4 cup blueberries

Process cashews in food processor, adding lemon juice and acv, blend until creamy. Add agave and berries, blending until incorporated and mixture turns blue. Spread in an even layer over crust, place in freezer.

Middle Layer Cheesecake

  • 1 cup cashews, soaked several hours / overnight
  • juice of one lemon
  • 1/2 tablespoon apple cider vinegar

Process cashews in food processor, adding lemon juice and acv, blend until creamy. Spread in an even layer over blue layer, return to freezer.

Top Layer Cheesecake

  • 5 cups cashews, soaked several hours / overnight
  • juice of two lemons
  • 1 tablespoon apple cider vinegar
  • 1/2 cup agave
  • 3/4 cup raspberries

Process cashews in food processor, adding lemon juice and acv, blend until creamy. Add agave and berries, blending until incorporated and mixture turns red. Spread in an even layer over white layer. Return to freezer for several hours / overnight.

4th of July layered Rice Krispies Treats* (Kid-Friendly)

Kids are notoriously picky eaters, but this 4th of July dessert recipe is a fan favorite that rarely gets turned down by even the most discerning youngsters. And it’s so easy the kids can even help make it!

Ingredients

  • 3 tablespoons melted butter, divided
  • 6 cups miniature marshmallows, divided
  • 6 cups Rice Krispies cereal, divided
  • Red food coloring
  • Blue food coloring

Directions

  • Line a 9 x 9-inch dish with parchment paper. Set aside.
  • To a large skillet over medium heat, add 1 tablespoon of melted butter and 2 cups of marshmallows. Stir until the marshmallows are smooth and melted. Add in a few drops of red food coloring. Stir until the color is thoroughly combined.
  • Stir in 2 cups of Rice Krispies cereal, and toss to cover equally. Work quickly so the cereal does not harden.
  • Add to the parchment-lined dish, and flatten.
  • Rinse out the pan, and add 1 tablespoon of melted butter and 2 cups of marshmallows. Stir until the marshmallows are smooth and melted.
  • Stir in 2 cups of Rice Krispies cereal, and toss to cover equally. Work quickly so the cereal does not harden.
  • Add as a second layer to the parchment-lined dish, and flatten.
  • Rinse out the pan, and add the last tablespoon of melted butter and the last 2 cups of marshmallows. Stir until the marshmallows are smooth and melted. Add in a few drops of blue food coloring. Stir until the color is thoroughly combined.
  • Stir in the last 2 cups of Rice Krispies cereal, and toss to cover equally. Work quickly so the cereal does not harden.
  • Add as a third layer to the parchment-lined dish, and flatten.
  • Let the Treats sit for at least 10 minutes before cutting.
